Chapati Egg Kothu Parotta - Leftover Chapati
Chapati Egg Kothu Parotta is an easy recipe made with whole wheat atta chapati. Stir-fry it with onions, tomatoes, egg, and mixing all the masala and serve it hot.

Ingredients:
4 Leftover Chapatis (Small Pieces)
1 Tablespoon Oil
1/2 Teaspoon Mustard Seeds
1 Cup Chopped Onions
3 Chopped Green Chilies
1/2 Cup Chopped Tomatoes
1 Teaspoon Ginger Garlic Paste
1/2 Teaspoon Turmeric Powder
1/2 Teaspoon Red Chili Powder
3/4 Teaspoon Salt
1/2 Teaspoon Coriander Powder
1/4 Teaspoon Garam Masala
4 Eggs
1/2 Lemon Juice
Coriander Leaves
Method:
Heat 1 tablespoon oil and add 1/2 teaspoon mustard seeds.
Add 1 cup chopped onion, add 3 chopped green chilies, and sauté for 2 minutes.
Add 1/2 cup chopped tomatoes and sauté until tomatoes are soft.
Add 1 teaspoon ginger garlic paste, 1/2 teaspoon turmeric powder, and mix well.
Add 1/2 teaspoon red chili powder, 3/4 teaspoon salt, 1/2 teaspoon coriander powder, 1/4 teaspoon garam masala, and mix all together.
Now add 4 eggs and fry until eggs are scrambled well.
Add leftover chapati and mix well for 1 minute.
Add chopped coriander leaves, 1/2 lemon juice, and mix well.
Turn off the stove and serve it hot.
