Chapati Egg Kothu Parotta - Leftover Chapati

Chapati Egg Kothu Parotta is an easy recipe made with whole wheat atta chapati. Stir-fry it with onions, tomatoes, egg, and mixing all the masala and serve it hot.

Ingredients:

  • 4 Leftover Chapatis (Small Pieces)

  • 1 Tablespoon Oil

  • 1/2 Teaspoon Mustard Seeds

  • 1 Cup Chopped Onions

  • 3 Chopped Green Chilies

  • 1/2 Cup Chopped Tomatoes

  • 1 Teaspoon Ginger Garlic Paste

  • 1/2 Teaspoon Turmeric Powder

  • 1/2 Teaspoon Red Chili Powder

  • 3/4 Teaspoon Salt

  • 1/2 Teaspoon Coriander Powder

  • 1/4 Teaspoon Garam Masala

  • 4 Eggs

  • 1/2 Lemon Juice

  • Coriander Leaves


Method:

  1. Heat 1 tablespoon oil and add 1/2 teaspoon mustard seeds.

  2. Add 1 cup chopped onion, add 3 chopped green chilies, and sauté for 2 minutes.

  3. Add 1/2 cup chopped tomatoes and sauté until tomatoes are soft.

  4. Add 1 teaspoon ginger garlic paste, 1/2 teaspoon turmeric powder, and mix well.

  5. Add 1/2 teaspoon red chili powder, 3/4 teaspoon salt, 1/2 teaspoon coriander powder, 1/4 teaspoon garam masala, and mix all together.

  6. Now add 4 eggs and fry until eggs are scrambled well.

  7. Add leftover chapati and mix well for 1 minute.

  8. Add chopped coriander leaves, 1/2 lemon juice, and mix well.

  9. Turn off the stove and serve it hot.
