Chicken Fried Rice

This fried rice is made in Indo Chinese version which is quite popular all across fast food joints in India. Rice is fried and sautéed well and this is the perfect chicken fried rice recipe that is served in fast food centers and restaurants.

Ingredients:


For Chicken:

  • 200 Grams sliced Chicken

  • 1 Teaspoon Salt

  • 1 Teaspoon Pepper Powder

  • 1 Tablespoon Cornflour

  • 2 Tablespoons Oil


For Egg:

  • 2 Eggs

  • 1/2 Teaspoon Pepper Powder

  • 1/2 Teaspoon

  • Salt


For Rice:

  • 1 Tablespoon Oil

  • 3 Chopped Garlic

  • 4-5 Green Chilies

  • Few Scallops

  • 3 Tablespoon Dark Soya Sauce

  • 2 Tablespoons Chili Garlic Sauce

  • 1 Cup Cooked Rice

  • 1 Teaspoon Pepper Powder

  • 1 Teaspoons Salt Spring Onion Greens


Method:


1. Take 200 grams of sliced chicken and add 1 teaspoon salt, 1 teaspoon pepper powder, 1 tablespoon cornflour. Mix well and keep it aside for 30 minutes.

2. Heat 2 tablespoons of oil and fry the marinated chicken strips. Stir fry until chicken is cooked. Take it aside.

3. In the same oil break two eggs and fry them. Scramble it well and add 1/2 teaspoon pepper powder, 1/2 teaspoon salt. Once the eggs are done take them aside.

4. Heat 1 tablespoon oil and add 3 chopped garlic. Sauté until rawness goes away.

5. Add 4-5 chopped green chilies and few scallops. Add 3 tablespoons dark soya sauce, 2 tablespoons of chili garlic sauce and mix well.

6. Now add 1 cup cooked rice and mix well.

7. Add 1 teaspoon pepper powder, 1 teaspoon salt, and mix the rice well in the sauce.

8. Now add the chicken and eggs. Garnish with spring onion greens.

9. Serve hot and enjoy.
