Drumsticks (Munnakaya) Korma

A thick rich gravy made with onion, tomatoes, peanuts and coconut and is cooked with drumstick (Munnakaya) till it has developed all the flavors. Serve with Roti or Naan.

Ingredients:

  • 2 Cups Water

  • 1 Teaspoon Salt

  • 3 Drumsticks

  • A piece of Ginger

  • 2 Tbsps Oil

  • 1 Teaspoon Jeera

  • 1 Chopped Onion

  • 1/2 Turmeric Powder

  • 1 Teaspoon Ginger Garlic Paste

  • 1 Chopped Tomato

  • 1 Tablespoon Chili Powder

  • 2 Teaspoon Coriander Powder

  • 1 Teaspoon Jeera Powder

  • 1 Teaspoon Garam Masala

  • 1 Cup Coconut & Peanuts Puree

  • 1/2 Cup Drumsticks Stock

  • Coriander Leaves

Method:

  1. Boil 2 cups of water and add 1 teaspoon salt. Now add 3 peeled drumsticks, a piece of ginger, and cook until drumsticks are soft.

  2. Heat 2 tablespoons oil and add 1 teaspoon Jeera, 1 chopped onion. Sauté until onions are translucent.

  3. Add 1/2 teaspoon turmeric powder, 1 teaspoon ginger-garlic paste and mix well for 30 seconds.

  4. Add 1 chopped tomatoes and sauté until tomatoes are soft.

  5. Now add 1 tablespoon chili powder, 2 teaspoons coriander powder, 1 teaspoon Jeera powder, 1 teaspoon garam masala, and mix well.

  6. Add 1 cup of coconut and peanuts puree. Mix well and cook for 10 minutes.

  7. Add cooked drumsticks. Close the lid and cook for 2 minutes.

  8. Add 1/2 cup drumsticks stock and mix well. Cook until oil separates.

  9. Garnish with coriander leaves and turn off the stove.
