Gongura (Red Sorrel) Paneer Bhurji

Gongura Paneer Bhurji - scrambled Indian cottage cheese cooked with gongura, onion, tomatoes, and spices. Goes well with Indian bread like paratha or on top of toast!

Ingredients:

  • 2 Cups Gongura

  • 1/2 Cup Chopped Tomatoes

  • 1 Tablespoon Oil

  • 1/2 Teaspoon Shahi Jeera

  • Few Cinnamon Sticks

  • 1 Cup Onions Chopped

  • 3 Chopped Green Chilies

  • 1 Teaspoon Ginger Garlic Paste

  • 1/2 Teaspoon Turmeric Powder

  • 1 1/2 Teaspoon Chili Powder

  • 1 Teaspoon Salt

  • 1/2 Teaspoon Coriander Powder

  • 1/4 Teaspoon Garam Masala

  • 1 1/2 Cup Scrambled Paneer

  • 4 Tablespoons Cream

  • 1/2 Teaspoon Sugar

Method:

  1. Boil 2 cups of gongura, add 1/2 cup chopped tomatoes and boil until tomatoes are soft.

  2. Mash the gongura and keep it aside.

  3. In a cooking bowl, heat 1 tablespoon oil and add 1/2 teaspoon Shahi Jeera, few cinnamon Sticks. Add 1 cup onions chopped, 3 chopped green chilies and fry until onions are light golden brown.

  4. Add 1 teaspoon ginger garlic paste, 1/2 teaspoon turmeric powder, and mix well.

  5. Add 1 1/2 teaspoon chili powder, 1 teaspoon salt, 1/2 teaspoon coriander powder, 1/4 teaspoon garam masala and mix well. Close the lid and cook for 2 minutes.

  6. Add 2 Teaspoons of gongura paste and mix well. Close the lid and cook for 3 minutes.

  7. Add 1 1/2 cup scrambled paneer and mix well.

  8. Add 4 tablespoons of cream and mix well.

  9. Add 1/2 Teaspoon sugar and turn off the stove.
