Gongura (Red Sorrel) Paneer Bhurji

Gongura Paneer Bhurji - scrambled Indian cottage cheese cooked with gongura, onion, tomatoes, and spices. Goes well with Indian bread like paratha or on top of toast!

2 Cups Gongura
1/2 Cup Chopped Tomatoes
1 Tablespoon Oil
1/2 Teaspoon Shahi Jeera
Few Cinnamon Sticks
1 Cup Onions Chopped
3 Chopped Green Chilies
1 Teaspoon Ginger Garlic Paste
1/2 Teaspoon Turmeric Powder
1 1/2 Teaspoon Chili Powder
1 Teaspoon Salt
1/2 Teaspoon Coriander Powder
1/4 Teaspoon Garam Masala
1 1/2 Cup Scrambled Paneer
4 Tablespoons Cream
1/2 Teaspoon Sugar
Boil 2 cups of gongura, add 1/2 cup chopped tomatoes and boil until tomatoes are soft.
Mash the gongura and keep it aside.
In a cooking bowl, heat 1 tablespoon oil and add 1/2 teaspoon Shahi Jeera, few cinnamon Sticks. Add 1 cup onions chopped, 3 chopped green chilies and fry until onions are light golden brown.
Add 1 teaspoon ginger garlic paste, 1/2 teaspoon turmeric powder, and mix well.
Add 1 1/2 teaspoon chili powder, 1 teaspoon salt, 1/2 teaspoon coriander powder, 1/4 teaspoon garam masala and mix well. Close the lid and cook for 2 minutes.
Add 2 Teaspoons of gongura paste and mix well. Close the lid and cook for 3 minutes.
Add 1 1/2 cup scrambled paneer and mix well.
Add 4 tablespoons of cream and mix well.
Add 1/2 Teaspoon sugar and turn off the stove.
