Kanafeh/Kunefe (Sweet Cheese Pastry)

Kanafeh is a traditional Middle Eastern dessert made with thin noodle-like pastry, sugar-based syrup, and layered with cheese sprinkled with crushed pistachios or walnuts. Crispy on the outside and melting on the inside, this delicate dessert is a real treat.

1/2 Cup Sugar
1/2 Cup Water
1 Tablespoon Rose Water
250 Grams Pheni
1/4 Cup Butter
1/2 Cup Shredded & Mozzarella Cheese
Add 1/2 cup sugar in a pot, add 1/2 cup water, 1 tablespoon rose water, orange zest, and mix until sugar melts.
When sugar becomes pouring consistency turn off the stove. Keep it aside.
Take 250 grams pheni and crush them with hand.
Add 1/4 cup butter to the pheni and mix well
Grease the pan with butter. Place the first layer of pheni in the pan.
With the help of a small bowl press the pheni and set it.
Add some sugar syrup to the pheni and layer with ricotta cheese. Spread evenly.
Add 1/2 cup shredded cheese and mozzarella cheese.
Now top with the final layer of pheni.
Place it on stove and cook for 5 minutes on medium heat. Add sugar syrup.
Now take a thick plate and grease it with butter. Gently place the plate on the pan and flip it (MAKE SURE YOU TURN OFF THE STOVE).
Add some more butter and place the pheni carefully to cook another side.
Add the rest of the sugar syrup. Cook for 5 minutes and take it in a thick plate.
Garnish it with pistachios powder/dry fruits powder. Serve hot.
