Punjabi Dum Aloo

Dum Aloo is a North Indian curry made with baby potatoes that are simmered in onion and tomato-based gravy, spiced with red chili powder, garam masala, and a garnished with dried fenugreek leaves.

Ingredients:


For Potatoes:

  • 200 Grams Baby Potatoes

  • 1/4 Teaspoon Turmeric Powder

  • 1/4 Teaspoon Chili Powder

  • 1/4 Teaspoon Salt

For Gravy:

  • 1 Onion

  • 3 Garlic Cloves

  • 3 Small Ginger Pieces

  • 3 Green Chilies

  • 1 Tablespoon Oil

  • 1/2 Teaspoon Shah Jeera

  • 3 Sticks Cinnamon

  • 1 Tomato

  • 15 Cashews

  • 1/4 Teaspoon Turmeric Powder

  • 1/2 Teaspoon Red Chili Powder

  • 3/4 Teaspoon Salt

  • 1/2 Teaspoon Coriander Powder

  • 1/4 Teaspoon Jeera Powder

  • 1/4 Teaspoon Garam Masala

  • 2 Tablespoon Curd

  • 1/4 Teaspoon Kasuri Methi

  • Coriander Leaves


Method:

  1. Boil the baby potatoes and peel the skin off.

  2. Add 1/4 teaspoon turmeric powder, 1/4 teaspoon chili powder, 1/4 teaspoon salt, and mix well.

  3. Heat 2 tablespoons of oil and fry the boiled potatoes until golden brown. Keep it aside.

  4. In a grinder add 1 onion, 3 garlic cloves, 3 small pieces ginger, 3 green chilies, and make a smooth paste.

  5. Heat 1 tablespoon oil and add 1/2 teaspoon shah jeera, 3 sticks cinnamon.

  6. Now add onion paste and sauté for 3 minutes.

  7. Make a puree of 1 tomato and 15 cashews. Keep it aside.

  8. Add the tomato puree and mix well.

  9. Add 1/4 teaspoon turmeric powder, 1/2 teaspoon chili powder, 3/4 teaspoon salt, 1/2 teaspoon coriander powder, 1/4 teaspoon Jeera powder, 1/4 teaspoon garam masala and mix well.

  10. Add 1/2 cup water and cook for 5 minutes.

  11. Add 2 tablespoons curd, 1/4 teaspoon Kasuri methi. Mix well and cook for 2 minutes.

  12. Add fried potatoes and mix well.

  13. Add coriander leaves and turn off the stove.
