Rich & Creamy Cashew Chicken

This delicious Cashew Chicken is as good as it gets. By using cashews instead of cream, this recipe is as rich and creamy as any restaurant-style chicken. Serve with Jeera Rice or Naan.

Ingredients:

  • 1 Kg Chicken

  • 1/4 Cup Cashews

  • 2 Tomatoes

  • 1 Tablespoon Oil

  • 1 Teaspoon Shah Jeera

  • 2 Sticks Cinnamon

  • 1 Cup Onion

  • 2 Green Chilies

  • 1/2 Teaspoon Turmeric Powder

  • 1 Teaspoon Ginger Garlic Paste

  • 2 Teaspoon Red Chili Powder

  • 1 Teaspoon Salt

  • 1 Teaspoon Coriander Powder

  • 1/2 Teaspoon Garam Masala

  • Coriander Leaves

Method:

  1. In a grinder add 1/4 cup cashew and 2 tomatoes. Make a puree and keep it aside.

  2. Heat 1 tablespoon oil and add 1 teaspoon shah Jeera, 2 cinnamon sticks.

  3. Add 1 cup onions, 2 green chilies, and sauté until onions are light golden brown.

  4. Add 1/2 teaspoon turmeric powder, 1 teaspoon ginger-garlic paste, and 1 kg chicken.

  5. Close the lid and cook for 1 minute.

  6. Add 2 teaspoons red chili powder, 1 teaspoon salt. Mix well and cool for 5 minutes with lid closed.

  7. Add 1 cup water and cook for 5 more minutes.

  8. Add tomato cashew puree and cook until the gravy is thick.

  9. Add 1 teaspoon coriander powder, 1/2 teaspoon garam masala, coriander leaves, and mix well.

  10. Turn off the stove and enjoy with roti.
