Street Style Pav Bhaji

Pav Bhaji is popular Indian street food. Pav Bhaji is made with potatoes and vegetables cooked in a tomato base and enjoyed with Pav or dinner rolls.

Ingredients:
1 1/2 Cup Cauliflower
1 1/2 Cup Cabbage
2 Large Potatoes
1 Cup Carrot
1/4 Cup Capsicum
3 Tablespoons Oil
4-5 Chopped Green Chili
2 Finely Chopped Onions
2 Teaspoons Ginger Garlic Paste
3 Finely Chopped Tomatoes
1 Teaspoon Turmeric Powder
2 Teaspoons Chili Powder
Salt as per taste
1 Finely Chopped Capsicum
1/4 Cup Chopped Mint
2 Teaspoons Pav Bhaji Masala
2 Teaspoons Butter
Coriander Leaves

Method:
In a pressure cooker add 1 1/2 cup cauliflower, 1 1/2 cabbage, 2 large potatoes, 1 cup carrots, and 1/4 cup capsicum. Add 2 cups of water and pressure cook for 3 whistles.
Once the pressure is out mash the vegetables with a masher. Keep it aside.
Heat 3 tablespoons oil, add 5 finely chopped green chilies, and 2 finely chopped onions. Sauté the onions until light golden brown.
Add 2 teaspoons ginger garlic paste, 1 teaspoon turmeric powder and mix well.
Add 3 finely chopped tomatoes, 2 teaspoons chili powder, salt as per taste, and 1 large chopped capsicum. Mix well and cook for 5 minutes.
Add 1/4 cup mint leaves. Mix and sauté for 1 minute.
Add mashed vegetables, 2 teaspoons pav bhaji masala, and 2 teaspoons butter. Mix well and cook for 5 minutes.
Add coriander leaves and turn off the stove.
Heat the butter in a pan and fry the pav on both sides.
Serve the pav bhaji with finely chopped onions and lemon slice.
