Sweet Corn Soup

One of the simplest soup recipes that can be made at home. It's very lightly spiced and make a great soup for cold days. It's one of the very popular Indo-Chinese soup recipes.

1 Tablespoon Oil
1 Teaspoon Chopped Garlic
1 Teaspoon Chopped Green Chilies
1 Cup Chopped Carrots
1 Cup Chopped Green Beans
1 Teaspoon Vinegar
1 Teaspoon Soya Sauce
32 oz Vegetable Stock
1 Cup Water
1 Cup Creamy Style Sweet Corn
1 1/2 Teaspoon Salt
1/2 Teaspoon Sugar
1/2 Teaspoon Pepper Powder
3 Tablespoon Corn Starch Water
1 Beaten Egg
Chopped Coriander Leaves for Garnish
Heat 1 tablespoon oil, add 1 teaspoon chopped garlic, 1 teaspoon chopped green chilies, 1 cup chopped carrots, 1 cup chopped green beans, stir fry for 2 minutes.
Add 1 teaspoon vinegar, 1 teaspoon soya sauce and mix well.
Add 32 oz vegetable stock, add 1 cup water, 1 cup creamy style sweet corn & mix well.
Add 1 1/2 teaspoon salt, 1/2 teaspoon sugar, 1/2 teaspoon pepper powder, mix well & boil it for 3 minutes.
Add 3 tablespoon corn starch water to thicken the soup.
Add 1 beaten egg slowly for a creamy look (optional ).
Add chopped coriander leaves for garnish, turn off the stove & serve hot.
