Homemade Veg Haleem

Haleem is very popular in Hyderabad. Haleem originally is a stew composed of meat, lentil, and cracked wheat that is made into a thick paste. Instead of the meat, we used soya chunks in this recipe to give a slimy texture to the dish.

Ingredients:

  • 1 Cup Soya

  • 1/2 Cup Cracked Wheat

  • 1/4 Cup Oats

  • 1 Cup Fried Onions

  • 1/2 Teaspoon Cumin Seeds (Jeera)

  • 1 Tablespoon Black Pepper

  • 1 Teaspoon Shahi Jeera

  • 3 Sticks Cinnamon

  • 4 - 5 Cardamom

  • 5 - 6 Cloves

  • 1/4 Cup Almonds & Cashews

  • 1 Teaspoons Urad Dal

  • 1 Teaspoons Moong Dal

  • 1 Teaspoons Masoor Dal

  • 1 Teaspoons Chana Dal

  • 1 Teaspoons Sesame Seeds

  • 2 Teaspoons Salt

  • 1/4 Cup Rose Patels

  • 2 Teaspoons Ginger Garlic Paste

  • 2 Tablespoons Curd

  • 5 Green Chilies

  • 1/4 Cup Mint

  • 1/4 Cup Coriander Leaves

  • 2 Tablespoons Lemon Juice

Method:

  1. In a bowl, take 1/2 Cup Cracked Wheat, 1/4 Cup Oats, 1/2 Teaspoon Cumin Seeds (Jeera), 1 Tablespoon Black Pepper 1 Teaspoon Shahi Jeera, 3 Sticks Cinnamon, 4-5 Cardamom, 5-6 Cloves, 1/4 Cup Almonds & Cashews, 1 Teaspoon Urad Dal, 1 Teaspoon Moong Dal, 1 Teaspoon Masoor Dal, 1 Teaspoon Chana Dal, 1 Teaspoon Sesame Seeds & mix them with a spoon and grind them into a coarse powder.

  2. Boil 1 cup soya chunks for 5 minutes & drain it and keep it aside.

  3. In a pressure cooker add 1 tablespoon ghee, ginger garlic paste & fry for 30 seconds and add soya chunks & mix them well.

  4. Add chopped carrots, chopped beans & stir fry for 5 minutes.

  5. Add 2 cups water, add green chilies, chopped mint, chopped cilantro, fried onions, curd, add dry ingredients powder, add 1 tablespoon salt, and mix it.

  6. Add rose petals and add 1 cup water. Mix well and close the pressure cooker.

  7. Cook for one whistle & open the pressure cooker cover add 1 cup water & cook for 30 minutes on low flame, take a potato masher and mash it into a paste.

  8. Turn off the stove and serve hot.
