Windhu Special Chicken

Windhu Special Chicken is a village style curry. Making masala fresh will give a unique taste to the chicken. Serve with rice or roti.

Ingredients:
For Masala Paste:
1/2 Teaspoon Jeera
1/2 Teaspoon Peppercorns
1 Teaspoon Poppy Seeds
5-6 Cloves
2 Sticks Cinnamon
5 Cardamoms
4 Dry Red Chilies
1 Teaspoon Coriander Seeds
4 Cloves Garlic
Small Ginger Piece
For Curry:
200 Grams Chicken
2 Tablespoons Oil
1/2 Teaspoon Shah Jeera
1 Cup Onion
1/2 Cup Methi Leaves
1/2 Teaspoon Turmeric Powder
1/2 Teaspoon Chili Powder
1 Teaspoon Salt
Coriander Leaves
Method:
For Masala Paste:
In a bowl, 1/2 teaspoon Jeera, 1/2 teaspoon peppercorns, 1 teaspoon poppy seeds, 5-6 cloves, 2 sticks cinnamon, 5 cardamoms, 4 dry red chilies & soak them overnight.
Add 1 teaspoon coriander seeds.
Crush 4 cloves garlic, small ginger piece & add them in the bowl,
Crush all the soaked spices and make a fine paste.
For Curry:
In a cooking pan, heat 2 tablespoons oil and add 1/2 teaspoon shah Jeera, 1 cup chopped onions & fry until golden brown.
Add 1/2 Cup methi leaves & fry for 1 minute.
Add the ground masala paste & fry for 5 minutes.
Add the 200 Grams Chicken & mix well.
Add 1/2 teaspoon turmeric powder, 1/2 teaspoon chili powder, 1 teaspoon salt & mix it well. Close the lid & cook for 5 minutes.
Add 1 cup water, mix well & close the lid & cook until chicken is cooked.
Add chopped coriander leaves & mix well.9. Once the gravy is thick, turn off the stove.
