Hyacinth beans are called Anumulu or Anapakaya. There is confusion on the name Anapakaya where few Andhra call Sorakaya/ Bottle gourd as Anapakaya. It was one most enjoyable treats and makes a great healthy salad.

Ingredients

  • 250 Grams Anapakaya (Hyacinth Beans)
  • 1 Cup Water
  • 1 Teaspoon Salt
  • 1 Tablespoon Oil
  • 1 Teaspoon Jeera
  • 1 Teaspoon Mustard Seeds
  • Few Dry Red Chilies
  • 5 Green Chilies
  • Few Curry Leaves
  • 1/2 Teaspoon Ginger Garlic Paste
  • 1/2 Teaspoon Pepper Powder
  • 2 Teaspoons Lemon Juice
  • Chopped Onions
  • Chopped Tomatoes
  • Chopped Coriander Leaves

Method

Step 1

Take out the seeds from Anapakaya and keep them aside.

Step 2

Add the seeds to the pressure cooker and add 1 cup water, 1 teaspoon salt. Mix well and close the pressure cooker lid. Cook up to 3 whistles.

Step 3

Once the pressure releases, take out the lid and drain out all the water.

Step 4

Heat 1 tablespoon of oil and add 1 teaspoon jeera, 1 teaspoon mustard seeds, few dry red chilies, 5 green chilies, few curry leaves, and satué well.

Step 5

Add 1/2 teaspoon ginger garlic paste and mix well.

Step 6

Add boiled Anapakaya and mix well. Now add 1/2 teaspoon pepper powder, 2 teaspoons lemon juice, and mix well. Turn off the stove.

Step 7

Garnish with chopped onions, chopped tomatoes, and coriander leaves.
