Punjabi Chole Masala is a spicy curry from the northern region of India. Made from chickpeas, onion, tomatoes, ginger, garlic, and Indian spices, it is one of the most delicious curries to try if you like Indian food.
Ingredients (For Chana)
- 1 Cup Chana (Chickpeas)
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Baking Soda
- 1 Tea Bag
Ingredients (For Curry)
- 1 Chopped Onion
- 2 Green Chilies
- 1 Chopped Tomato
- 2 Tablespoons Oil
- 1/2 Teaspoon Jeera
- 3 Bay Leaves
- 1 Teaspoon Ginger Garlic Paste
- 1/2 Teaspoon Turmeric Powder
- 1/2 Teaspoon Red Chili Powder
- 1/2 Teaspoon Salt
- 1 Teaspoon Chana Masala
- 1/2 Teaspoon Coriander Powder
- 1/4 Teaspoon Amchur Powder
- 1/2 Cup Water
- Chopped Coriander Leaves
Method
Step 1
Soak 1 cup chana overnight. Add the soaked in the pressure cooker and add 1/2 teaspoon salt, 1/4 teaspoon baking soda, 1 tea bag. Pressure cook up to 3 whistles.
Step 2
Add 1 chopped onion, 2 green chilies to the grinder and make a smooth paste. Keep it aside.
Step 3
Add 1 chopped tomato and make a smooth paste. Keep it aside.
Step 4
Heat 2 tablespoons of oil and add 1/2 teaspoon jeera, 3 bay leaves.
Step 5
Add onion paste and sauté well for a minute.
Step 6
Add 1 teaspoon ginger garlic paste, 1/2 teaspoon turmeric powder, and mix well.
Step 7
Add tomato purée and mix well. Close the lid and cook for 2 minutes.
Step 8
Add 1/2 teaspoon red chili powder, 1/2 teaspoon salt, 1 teaspoon chana masala, 1/2 teaspoon coriander powder, 1/4 teaspoon amchur powder, and mix well. Close the lid and cook for 2 minutes.
Step 9
Add boiled chana and mix well. Add 1/2 cup water and cook for 5 minutes.
Step 10
Add chopped coriander leaves and turn off the stove. Serve hot with Puri or Bhatura.
