Chama Dumpa Fry is a crisp fried arbi (taro root or colocasia) from Andhra Pradesh. It is an excellent accompaniment to curd rice or sambar rice.
Ingredients
- 200 Grams Chamadumpa (Arbi)
- 1 Teaspoon Red Chili Powder
- 1/2 Teaspoon Salt
- 2 Teaspoon Cornflour
- 1 Tablespoon Oil
- 1/2 Teaspoon Jeera
- 1/2 Teaspoon Mustard Seeds
- 1 Teaspoon Urad Dal
- 5 Green Chilies
- Few Curry Leaves
- 1/2 Teaspoon Pepper Powder
- Chopped Coriander Leaves
Method
Step 1
Take out the skin from arbi and cut it into pieces. Take them into the bowl.
Step 2
Add 1 teaspoon red chili powder, 1/2 teaspoon salt, 2 teaspoons cornflour, add little water, and mix well. Keep them aside for 5 minutes.
Step 3
Heat oil in a Kadai and deep fry arbi until crispy. Take them out and keep them aside.
Step 4
Heat 1 tablespoon oil and add 1/2 teaspoon jeera, 1/2 teaspoon mustard seeds, 1 teaspoon urad dal, 5 green chilies, few curry leaves. Sauté well for 30 seconds.
Step 5
Add fried arbi and mix well.
Step 6
Add 1/2 teaspoon pepper powder, chopped coriander leaves, and mix well. Turn off the stove.
