Veg Korma is a delicious South Indian style mix vegetable that’s amazing and easy to make. This dish is made with yogurt, poppy seeds, cashews, and coconut paste. Serve with Pulao, roti, poori, or naan.
Ingredients
- 1 Teaspoon Poppy Seeds
- 1 Tablespoon Oil
- 1/2 Teaspoon Shah Jeera
- 2 Cinnamon Sticks
- 2 Bay Leaves
- 1 Cup Chopped Onion
- 3 Chopped Green Chilies
- 1 Teaspoon Ginger Garlic Paste
- 1/2 Teaspoon Turmeric Powder
- 1/2 Cup Chopped Tomatoes
- 1 Teaspoon Red Chili Powder
- 1 Teaspoon Salt
- 1/4 Cup Carrots
- 1/4 Cup Beans
- 1/4 Cup Cauliflower
- 1/2 Cup Potato
- 1/4 Cup Peas
- 1 Tablespoon Cashews
- 2 Tablespoons Coconut
- 1/2 Teaspoons Coriander Powder
- 1/4 Teaspoon Garam Masala
- Chopped Coriander Leaves
Method
Step 1
Add 1 teaspoon poppy seeds to the bowl and add water. Soak it for 15 minutes.
Step 2
Heat 1 tablespoon oil and add 1/2 teaspoon shah jeera, 2 cinnamon sticks, 2 bay leaves.
Step 3
Add 1 cup chopped onions, 3 chopped green chilies, and sauté well until onions are light golden brown.
Step 4
Add 1 teaspoon ginger garlic paste, 1/2 teaspoon turmeric powder, and mix well.
Step 5
Add 1/2 cup chopped tomatoes and cook until tomatoes are soft.
Step 6
Add 1 teaspoon red chili powder, 1 teaspoon salt, and mix well.
Step 7
Add 1/4 cup carrots, 1/4 cup beans, 1/4 cup cauliflower, 1/2 cup potato, 1/4 cup peas, and mix well.
Step 8
Add 1 cup water and cook for 5 minutes.
Step 9
Add soaked poppy seeds in the grinder, add 1 tablespoon cashews, 2 tablespoons coconut and make a smooth paste.
Step 10
Add 1/2 teaspoon coriander powder, 1/4 teaspoon garam masala, poppy seeds paste and mix well. Close the lid and cook for 3 minutes.
Step 11
Add 2 tablespoons curd and mix well. Close the lid and cook for a minute.
Step 12
Add chopped coriander leaves and turn off the stove.
