Egg Bhurji is the spiced Indian version of scrambled eggs. Egg Bhurji, also known as Anda Bhurji, is popular Indian street food and a wonderful breakfast, lunch, or dinner recipe. Tomatoes, onions, capsicum, and spices.

Ingredients

  • 8 Eggs
  • 2 Tablespoons Oil
  • 2 Large Chopped Onions
  • 1 Tablespoon Ginger Garlic Paste
  • 1/2 Teaspoon Turmeric Powder
  • 1 Cup Chopped Tomatoes
  • 1 Cup Chopped Capsicum
  • 2 Teaspoon Red Chili Powder
  • 1 1/2 Teaspoon Salt
  • 1/2 Teaspoon Coriander Powder
  • 1/2 Teaspoon Jeera Powder
  • 1/2 Teaspoon Kasuri Methi
  • Chopped Coriander Leaves

Method

Step 1

Heat 2 tablespoons of oil and add 2 large chopped onions. Sauté for 2 minutes.

Step 2

Add 1 tablespoon oil, 1/2 teaspoon turmeric powder, and mix well.

Step 3

Add 1 cup chopped tomatoes, 1 cup chopped capsicum, and mix well. Close the lid and cook for 3 minutes.

Step 4

Add 2 teaspoons red chili powder, 1 1/2 teaspoon salt, 1/2 teaspoon coriander powder, 1/2 teaspoon jeera powder, and mix well—Cook for a minute.

Step 5

Crack 8 eggs and close the lid and cook for a minute.

Step 6

Slowly mix the egg curry. Once the egg is fully cooked, add 1/2 teaspoon Kasuri methi, chopped coriander leaves, and mix well.

Step 7

Turn off the stove and serve hot with roti or chapati.
