A thick rich gravy made with onion, tomatoes, peanuts and coconut and is cooked with drumstick (Munnakaya) till it has developed all the flavors. Serve with Roti or Naan.
Ingredients
- 2 Cups Water
- 1 Teaspoon Salt
- 3 Drumsticks
- A piece of Ginger
- 2 Tablespoons Oil
- 1 Teaspoon Jeera
- 1 Chopped Onion
- 1/2 Turmeric Powder
- 1 Teaspoon Ginger Garlic Paste
- 1 Chopped Tomato
- 1 Tablespoon Chili Powder
- 2 Teaspoon Coriander Powder
- 1 Teaspoon Jeera Powder
- 1 Teaspoon Garam Masala
- 1 Cup Coconut & Peanuts Puree
- 1/2 Cup Drumsticks Stock
- Coriander Leaves
Method
Step 1
Boil 2 cups of water and add 1 teaspoon salt. Now add 3 peeled drumsticks, a piece of ginger, and cook until drumsticks are soft.
Step 2
Heat 2 tablespoons oil and add 1 teaspoon Jeera, 1 chopped onion. Sauté until onions are translucent.
Step 3
Add 1/2 teaspoon turmeric powder, 1 teaspoon ginger-garlic paste, and mix well for 30 seconds.
Step 4
Add 1 chopped tomato and sauté until tomatoes are soft.
Step 5
Now add 1 tablespoon chili powder, 2 teaspoons coriander powder, 1 teaspoon Jeera powder, 1 teaspoon garam masala, and mix well.
Step 6
Add 1 cup of coconut and peanuts puree. Mix well and cook for 10 minutes.
Step 7
Add cooked drumsticks. Close the lid and cook for 2 minutes.
Step 8
Add 1/2 cup drumsticks stock and mix well. Cook until oil separates.
Step 9
Garnish with coriander leaves and turn off the stove.
