Gongura Paneer Bhurji – scrambled Indian cottage cheese cooked with gongura, onion, tomatoes, and spices. Goes well with Indian bread like paratha or on top of toast!
Ingredients
- 2 Cups Gongura
- 1/2 Cup Chopped Tomatoes
- 1 Tablespoon Oil
- 1/2 Teaspoon Shahi Jeera
- Few Cinnamon Sticks
- 1 Cup Onions Chopped
- 3 Chopped Green Chilies
- 1 Teaspoon Ginger Garlic Paste
- 1/2 Teaspoon Turmeric Powder
- 1 1/2 Teaspoon Chili Powder
- 1 Teaspoon Salt
- 1/2 Teaspoon Coriander Powder
- 1/4 Teaspoon Garam Masala
- 1 1/2 Cup Scrambled Paneer
- 4 Tablespoons Cream
- 1/2 Teaspoon Sugar
Method
Step 1
Boil 2 cups of gongura, add 1/2 cup chopped tomatoes and boil until tomatoes are soft. Mash the gongura and keep it aside.
Step 2
In a cooking bowl, heat 1 tablespoon oil and add 1/2 teaspoon Shahi Jeera, few cinnamon Sticks. Add 1 cup onions chopped, 3 chopped green chilies, and fry until onions are light golden brown.
Step 3
Add 1 teaspoon ginger garlic paste, 1/2 teaspoon turmeric powder, and mix well.
Step 4
Add 1 1/2 teaspoon chili powder, 1 teaspoon salt, 1/2 teaspoon coriander powder, 1/4 teaspoon garam masala, and mix well. Close the lid and cook for 2 minutes.
Step 5
Add 2 Teaspoons of gongura paste and mix well. Close the lid and cook for 3 minutes.
Step 6
Add 1 1/2 cup scrambled paneer and mix well.
Step 7
Add 4 tablespoons of cream and mix well. Add 1/2 Teaspoon sugar and turn off the stove.
