This khaman dhokla recipe makes a wonderfully soft and fluffy, lightly sweet, and savory cake. This popular Gujarati delicacy, perfect for enjoying breakfast or snacks. It’s easy to prepare steamed on the stovetop and pressure cooker.

Ingredients (For Dhokla)

  • 1 Cup Besan (Chickpeas Flour)
  • 1 1/2 Tablespoon Sooji
  • 1/2 Teaspoons Citric Acid
  • 1 1/2 Tablespoon Sugar
  • A Pinch of Turmeric Powder
  • 1 Teaspoon Ginger Paste
  • 1 Teaspoon Green Chili Paste
  • 1 Tablespoon Oil
  • 1 Teaspoon Salt
  • 1 Cup Water
  • 1 1/2 Teaspoon ENO (Fruit Salt)

Ingredients (For Seasoning)

  • 1 Tablespoon Oil
  • 1 Teaspoon Mustard Seeds
  • 1 Teaspoon Sesame Seeds
  • 4 Chopped Green Chilies
  • 1/2 Teaspoon Hing
  • Chopped Coriander Leaves
  • Freshly Grated Coconut

Method

Step 1

Take a bowl and add 1 cup besan, 1 1/2 tablespoon sooji, 1/2 teaspoon citric acid, 1 1/2 tablespoon sugar, a pinch of turmeric powder, 1 teaspoon ginger paste, 1 teaspoon green chili paste, 1 tablespoon oil, 1 teaspoon salt.

Step 2

Add 1 cup of water and whisk well for 5 minutes.

Step 3

Apply oil to the dhokla pan and keep it aside.

Step 4

Add 1 1/2 teaspoon Eno (fruit salt) and whisk well. Transfer immediately to the pan.

Step 5

Put the steamer on the stove and stream the dhokla for 20 minutes.

Step 6

Heat 1 tablespoon oil and add 1 teaspoon mustard seeds, 1 teaspoon sesame seeds, 4 chopped green chilies, 1/4 teaspoon hing, and mix well.

Step 7

Add the seasoning to the dhokla and add chopped coriander leaves, add freshly grated coconut.

Step 8

Cut the dhokla and serve with green chutney.
