An easy-peasy pressure cooker healthy and healing recipe. Khichdi an Indian “Detox” meal made with soaked masoor dal, rice, and cleansing vegetables like carrots, kale, and soothing turmeric. This Khichdi can be put together in minutes but tastes absolutely delicious. Drizzled with some ghee, it’s food for the soul, and very nutritious too.
Ingredients
- 1 Teaspoon Ghee
- 2 Chopped Garlic
- 1/2 Teaspoon Jeera
- 1 Finely Chopped Carrot
- 1 Cup Chopped Kale
- 1/2 Teaspoon Turmeric Powder
- 1/2 Teaspoon Red Chili Powder
- 1/3 Cup Masoor Dal & Rice
- 1/4 Teaspoon Salt
- 1 1/2 Cup Water
Method
Step 1
Heat 1 teaspoon ghee in a pressure cooker. Add 2 chopped garlic, 1 teaspoon jeera, and 1 finely chopped carrot. Sauté it well and add 1 cup chopped kale.
Step 2
Add 1/2 teaspoon turmeric powder, 1/2 teaspoon red chili powder, and sauté well.
Step 3
Once the veggies are cooked add 1/3 cup of masoor dal and rice. Give a stir and add 1/4 teaspoon salt. Mix well.
Step 4
Add 1 1/2 cup water. Close the lid and pressure cook up to 4 whistles.
Step 5
Once the pressure releases remove the pressure cooker lid and mix well.
Step 6
Serve hot and enjoy healthy kale khichidi.
