Handvo is a traditional Gujarati savory cake made with rice, lentils, and vegetables like bottle gourd, cabbage, and carrots. Spiced with fresh ginger and green chilies, tempered with mustard seeds, sesame seeds, and curry leaves. This can be enjoyed as a meal by itself with a side of green chutney.

Ingredients (For Handvo)

  • 1/2 Cup rice
  • 1/4 Cup Chana Dal
  • 1/4 Cup Moong Dal
  • 1/4 Cup Urad Dal
  • 1 Cup Grated Doodi
  • 1/2 Cup Grated Cabbage
  • 1/2 Cup Grated Carrot
  • 1/2 Cup Curd Coriander Leaves
  • 3/4 Teaspoon Baking Soda
  • 1 Teaspoon Salt
  • 1 Teaspoon Sugar
  • 1/4 Teaspoon Turmeric
  • 1/2 Teaspoon Chili Powder
  • 2 Green Chilies
  • 1 Teaspoon Grated Ginger
  • 2 Teaspoon Lemon Juice

Ingredients (For Seasoning)

  • 4 Tablespoons Oil
  • Curry Leaves
  • 2 Teaspoons Sesame Seeds
  • 1 Teaspoon Mustard Seeds
  • 1 Teaspoon Jeera
  • Hing

Method

Step 1

Soak 1/2 cup rice, 1/4 cup chana dal, 1/4 cup moong dal, 1/4 urad dal for 5 hours.

Step 2

Add soaked rice to a grinder and make a coarse paste. Take it to the bowl.

Step 3

Add soaked dal (moong dal, chana dal, urad dal) to a grinder and make a coarse paste. Take it to the bowl.

Step 4

Add 1 cup grated doodi, 1/2 cup grated cabbage, 1/2 cup grated carrot, 1/2 cup curd, coriander leaves, 3/4 teaspoon baking soda,1 teaspoon salt, 1 teaspoon sugar, 1/4 teaspoon turmeric, 1/2 teaspoon chili powder, 2 green chilies, 1 teaspoon grated ginger, 2 teaspoons lemon juice and mix all together. Keep it aside.

Step 5

Heat 4 tablespoons oil, curry leaves, 2 teaspoons sesame seeds, 1 teaspoon mustard seeds, 1 teaspoon jeera, hing, and mix well.

Step 6

Add half of the seasoning in handvo batter and mix well.

Step 7

Take a baking pan and add a little seasoning to the bottom of the pan.

Step 8

Now add the handvo batter to the baking pan and top with the rest of the seasoning.

Step 9

Put the baking tray in the oven and bake it at 400º for 35 minutes.

Step 10

After it is done, take it out and enjoy it with green chutney.
