Haleem is very popular in Hyderabad. Haleem originally is a stew composed of meat, lentil, and cracked wheat that is made into a thick paste. Instead of the meat, we used soya chunks in this recipe to give a slimy texture to the dish.
Ingredients
- 1 Cup Soya
- 1/2 Cup Cracked Wheat
- 1/4 Cup Oats
- 1 Cup Fried Onions
- 1/2 Teaspoon Cumin Seeds
- 1 Tablespoon Black Pepper
- 1 Teaspoon Shah Jeera
- 3 Sticks Cinnamon
- 4-5 Cardamoms
- 5-6 Cloves
- 1/4 Cup Almonds & Cashews
- 1 Teaspoon Urad Dal
- 1 Teaspoon Moong Dal
- 1 Teaspoon Chana Dal
- 1 Teaspoon Sesame Seeds
- 2 Teaspoons Salt
- 1/4 Cup Rose Petals
- 2 Teaspoons Ginger Garlic Paste
- 2 Tablespoons Curd
- 5 Green Chilies
- 1/4 Cup Mint
- 1/4 Cup Coriander Leaves
- 2 Tablespoons Lemon Juice
Method
Step 1
In a bowl, take 1/2 cup cracked wheat, 1/4 cup oats, 1/2 teaspoon cumin seeds (Jeera), 1 tablespoon black pepper 1 teaspoon shah Jeera, 3 sticks cinnamon, 4-5 cardamom, 5-6 cloves, 1/4 cup almonds & cashews, 1 teaspoon urad dal, 1 teaspoon moong dal, 1 teaspoon masoor dal, 1 teaspoon chana dal, 1 teaspoon sesame seeds & mix them with a spoon and grind them into a coarse powder.
Step 2
Boil 1 cup soya chunks for 5 minutes & drain it and keep it aside.
Step 3
In a pressure cooker, add 1 tablespoon ghee, ginger garlic paste & fry for 30 seconds. Add soya chunks and mix them well.
Step 4
Add chopped carrots, chopped beans, and stir fry for 5 minutes.
Step 5
Add 2 cups water, add green chilies, chopped mint, chopped cilantro, fried onions, curd, add dry ingredients powder, add 1 tablespoon salt, and mix it.
Step 6
Add rose petals and add 1 cup water. Mix well and close the pressure cooker.
Step 7
Cook for one whistle and open the pressure cooker cover add 1 cup water. Cook for 30 minutes on low flame, take a potato masher, and mash it into a paste.
Step 8
Turn off the stove and serve hot.
