Hyderabadi Mutton Dum Biryani is an extremely delicious dish with a subtle taste where raw mutton is cooked together with half-cooked rice and some authentic spices.
Ingredients (For Mutton Marination)
- 1 Pound Mutton
- 1 1/2 Teaspoon Raw Papaya Paste
- 1/2 Teaspoon Turmeric Powder
- 2 Teaspoons Chili Powder
- 1 1/2 Teaspoon Salt
- 1 Teaspoon Coriander Powder
- 1 Teaspoon Biryani Powder
- 1 Teaspoon Ginger Garlic Paste
- 3 Tablespoons Curd
- 1/4 Teaspoon Green Cardamom Powder
- 5 Green Chilies
- 1/2 Cup Mint Leaves
- 1/2 Cup Coriander Leaves
- 1 Cup Fried Onions
- 1/2 Lemon Juice
Ingredients (For Rice)
- 4 Cups Rice
- 3 Teaspoons Salt
- 1 Tablespoon Oil
- 1 Teaspoon Ghee
- 1 Teaspoon Ginger Garlic Paste
- 6-7 Cloves
- 8 Elachi
- 2 Bay Leaves
- 4-5 Cardamom
- Javitri
- Phool
- Coriander Leaves for Garnish
- Mint Leaves for Garnish
- Fried Onions for Garnish
Method (For Mutton Marination)
- Take 1 pound mutton and add 1 1/2 teaspoon raw papaya paste, massage the mutton for 3 minutes & keep it aside for 15 minutes.
- Add 1/2 teaspoon turmeric powder, 2 teaspoons chili powder, 1 1/2 teaspoon salt,1 teaspoon coriander powder, 1 teaspoon biryani powder, 1 teaspoon ginger garlic paste, 3 tablespoons curd and mix well, marinate overnight.
Method (For Cooking Rice)
- Soak 4 cups of rice for 30 minutes before cooking add 1/4 teaspoon green cardamom powder, 5 green chilies, 1/2 cup mint leaves, 1/2 cup coriander leaves, 1 cup fried onions, 1/2 lemon juice & mix well, keep it aside.
- Boil water and add 3 teaspoons salt, 1 tablespoon oil, 1 teaspoon ghee, 1 teaspoon ginger garlic paste, 6-7 cloves, 8 elachi, 2 Bay Leaves, 4-5 cardamom, Javitri Phool in water and mix well.
- Add soaked rice in boiling water and mix well, cook until 80 percent is done.
Method (For Setting Biryani)
- In a pot, heat 1 tablespoon ghee and spread eventually.
- Add the marinated mutton and cooked rice.
- Make holes and add 1 cup saffron milk.
- Add 2 teaspoon ghee, 1/2 lemon juice.
- Add mint leaves, coriander leaves, fried onions & cover with foil.
- Close the lid & cook for 10 minutes on a high flame.
- Put a pan underneath the pot & cook on a medium flame for 40 minutes.
- Remove the foil & turn off the stove.
