Kolhapuri Chicken is a kolhapuri style chicken curry that is infused with the bold & flavorful spices of the Kolhapur region. The uniqueness, flavor, and taste of this dish come from the roasted and freshly ground spices. This spicy chicken curry goes very well with plain steamed rice or even with chapati or roti.
Ingredients (For Kolhapuri Masala)
- 2 Tablespoons Coconut
- 3 Elachi
- 2 Cinnamon Sticks
- 6 Cloves
- 1/2 Teaspoon Jeera
- 1/4 Teaspoon Pepper
- 2 Teaspoons Coriander Seeds
- 1 Teaspoon Poppy Seeds
- 1 Teaspoon Sesame Seeds
- 12- 15 Badgi Red Chilies
Ingredients (For Chicken)
- 250 Grams Chicken
- 1/2 Teaspoon Turmeric Powder
- 1 Tablespoon Ginger Garlic Paste
- 1 Teaspoon Salt
- 2 Teaspoons Kolhapuri Masala Paste
Ingredients (For Gravy)
- 2 Tablespoons oil
- 1/2 Teaspoon Shah Jeera
- 1 Cup Chopped Onions
- 2 Tablespoons Tomato Purée
- 1 Cup Water
- Chopped Coriander Leaves
In a pan, add 2 tablespoons coconut, 2 elachi, 2 cinnamon sticks, 6 cloves, 1/2 teaspoon jeera, 1/4 teaspoon pepper, 2 teaspoons coriander seeds, 1 teaspoon poppy seeds, 1 teaspoon sesame seeds, 12-15 badgi red chilies, and dry roast for 2 minutes.
Add the spices to the grinder and add little water. Make a smooth paste.
ake 250 grams of chicken and add 1/2 teaspoon turmeric powder, 1 tablespoon ginger garlic paste, 1 teaspoon salt, 2 teaspoons kolhapuri masala paste. Mix well and marinate for 30 minutes.
Heat 2 tablespoons of oil and add 1/2 teaspoon shah jeera.
Add 1 cup chopped onions and fry until onions are brown.
Add marinated chicken and mix well. Close the lid and cook for 3 minutes.
Add 2 tablespoons of tomato purée and mix well. Close the lid and cook for 2 minutes.
Add 1 cup water and cook until chicken is well done.
Add chopped coriander leaves and turn off the stove.
