This lauki halwa is rich, creamy with perfectly moist, tender, sweet bottle gourd shreds. They’re deliciously sweet and flavored with sugar, khoya, and milk. It is flavored with cardamom powder and garnished with chopped nuts like raisins and cashews. 

Ingredients

  • 2 Cups Grated Lauki
  • 1 Cup Milk
  • 1 Cup Sugar
  • 1/4 Cup Khoya
  • 3 Tablespoons Ghee
  • 1/4 Teaspoons Cardamom Powder
  • 10 Cashews
  • 10 Raisins
  • 1 Tablespoon Mellon Nuts

Method

Step 1

Firstly rinse, peel and grate 300 grams lauki. Cut them into half and take out the seeds.

Step 2

Grate the lauki and squeeze out all the excess water. Keep it aside.

Step 3

Heat 2 tablespoons of ghee in a heavy bottom pan on medium flame and add cashew, raisins. Fry them until they are golden brown in color. Keep stirring while frying.

Step 4

In the same ghee, add Mellon nuts and sauté for a minute.

Step 5

Add 1 table ghee and add 2 cups of grated lauki. Satué until the moisture dries.

Step 6

Add 1 cup milk, 1 cup sugar and mix well. Keep stirring frequently to avoid milk from burning at the bottom of the pan.

Step 7

Add 1/4 cup khoya and cook on medium heat till the desired consistency of halwa is reached.

Step 8

Add 1/4 teaspoon cardamom powder, add fried nuts, and mix well.

Step 9

Turn off the stove and serve warm.
