This paneer and soya chunks biryani is a is perfect for a midday meal or a snack. The biryani calls for cottage cheese (paneer) and soya chunks to make it a great vegetarian choice for non-meat eaters.
Ingredients (For Boiling Soya Chunks)
- 6 Cups Water
- 1 Teaspoon Oil
- 1/2 Cup Soya Chunks
Ingredients (For Rice)
- 2.5 Cups Basmati Rice
- 1 Tablespoon Ghee
- 1 Teaspoon Shajeera
- 4 Cardamom
- 4 Cloves
- 2 Bay Leaves
- 3 Sticks Cinnamon
- 1 Teaspoon Salt
- Coriander Leaves
- Mint Leaves
Ingredients (For Paneer Marination)
- 1/2 Cup Curd
- 1/3 Cup Cream
- 1/2 Teaspoon Turmeric Powder
- 1 Teaspoon Coriander Powder
- 1 Teaspoon Jeera Powder
- 1/2 Teaspoon Garam Masala
- 2 Tablespoon Red Chili Powder
- 1 Tablespoon Kasuri Methi
- 1 Tablespoon Biryani Powder
- 1 Tablespoon Salt
- 1 Yellow Capsicum
- 250 Grams Paneer
- 2 Tablespoon Ghee
- Mint Leaves
Take 2.5 cups of basmati rice and soak for 30 minutes.
Boil 6 Cups water & add 1 teaspoon oil, add 1/2 cup soya chunks and take it aside once cooked.
In the same water, add 1 tablespoon ghee, 1 teaspoon Shah Jeera, 4 cardamom, 4 cloves, 2 bay leaves, 3 sticks cinnamon, 1 teaspoon salt, coriander leaves, mint leaves, and add 2.5 cups basmati rice.
Cook up to rice is 80% done and let it cool down.
In a bowl, add 1/2 cup curd, 1/3 cup cream, 1/2 teaspoon turmeric powder, 1 teaspoon coriander powder, 1 teaspoon Jeera powder, 1/2 teaspoon garam masala, 2 tablespoons red chili powder, 1 tablespoon Kasuri methi, 1 tablespoon biryani powder, 1 tablespoon salt and mix well.
Add chopped pudina, 1 yellow capsicum chopped, 250 grams paneer cubes, and mix well.
Add cooked soya chunks & mix well. Marinate it for 1 hour.
In a pan, heat 2 tablespoon ghee, add marinated soya chunks & paneer.
Cook until the oil oozes out and stir occasionally.
Once the gravy is cooked, take half of it aside.
Simmer the stove & start the layering. In the second layer, add the rest of the gravy. In the next layer, add the rest of the rice.
Add food color, add fried onions, 2 tablespoons butter.
Cover it with the foil and cook for 20 minutes on medium flame.
After 20 minutes, remove the foil and mix slightly. Serve hot.
