A simple, healthy, and delicious Andhra-style stir fry with water amaranth leaves and Chana Dal. This is one of the quick and easy ponnaganti recipes that can be done in 15-20 mins. It can be served great with rice or roti.
Ingredients
- 4 Bunches of Ponnaganti Kura
- 1/4 Cup Chana Dal
- 1 Cup Chopped Onions
- 1 Teaspoon Ginger Garlic Paste
- 1/2 Teaspoon Turmeric Powder
- 12-15 Garlic Pods
- 1 1/2 Teaspoon Red Chili Powder
- 1 Teaspoon Salt
Method
Step 1
Clean the ponnaganti Kura leaves and wash the leaves. Cut the leaves and keep them aside.
Step 2
Wash 1/4 cup chana dal and soak the dal for 15 minutes.
Step 3
Heat 2 tablespoons of oil and add 1 cup chopped onions. Sauté onions for 2 minutes.
Step 4
Add 1 teaspoon ginger garlic paste, 1/2 teaspoon turmeric powder, and mix well.
Step 5
Add chopped ponnaganti Kura, add 1 12/ teaspoon red chili powder, 1 teaspoon salt, 12-15 garlic pods, and mix well. Close the lid and cook for 5 minutes.
Step 6
Add soaked chana dal and mix well. Close the lid and cook for 5 more minutes.
Step 7
Mix well and cook until leaves are well done, and turn off the stove.
