Phirni or Firni is a traditional Kashmiri dessert which is made using milk and rice. This Mughlai sweet is a treat to eat and is very easy to make.
Ingredients
- 1/2 Cup Basmati Rice
- 1 Liter Full Fat Milk
- 1 Can Condensed Milk
- 1 Teaspoon Cardamom Powder
- 2 Pinches of Saffron
- 1/4 Cup Chopped Pistachios
Method
Step 1
Soak 1/2 cup Basmati Rice for 5 hours. After 5 hours, dry the rice on a paper towel and make a coarse powder.
Step 2
Take milk into a heavy bottom pan and bring it to a boil on medium heat.
Step 3
Once starts boiling add coarsely ground rice and cook till the rice is cooked and milk is thickened. Do stir in between and scrape the pan, so the milk does not stick and burn.
Step 4
Then add condensed milk, cardamom powder, and saffron. Mix well and cook for 5 minutes. Turn off the stove.
Step 5
Pour into individual serving bowls, garnish with pistachios, and crushed saffron strands.
Step 6
Cover it and chill in the refrigerator for few hours and then serve.
