Baingan Bharta Recipe is one of the most famous recipes in India, especially North India. This is no roasting Baingan Bharta, especially for those who don’t like roasted baingan. This is not the traditional way of preparing Baingan bharta, yet it is delicious and healthy. It goes well with Roti or Paratha.
Ingredients
- 1 Big Baingan (Eggplant)
- 2 Tablespoons Oil
- 1 Teaspoon Jeera
- 1 Teaspoon Mustard Seeds
- 1 Black Cardamom
- 1 Chopped Onion
- 1 Green Chili
- 1 Teaspoon Turmeric Powder
- 1/2 Cup Peas
- 1 Teaspoon Salt
- 2 Teaspoons Red Chili Powder
- 1 Chopped Tomato
- 1 Teaspoon Coriander Powder
- 1/2 Teaspoon Garam Masala
- Coriander Leaves
Method
Step 1
Take 1 big baingan and peel the skin. Cut it into pieces and put the baingan pieces in water.
Step 2
Heat 2 tablespoons of oil in a pan and add 1 teaspoon jeera, 1 teaspoon mustard seeds, 1 black cardamom.
Step 3
Now add 1 chopped onion, 1 green chili, and mix well. Once the onions are cooked, add 1 teaspoon turmeric powder. Mix well.
Step 4
Add chopped baingan, 1/2 cup peas, 1 teaspoon salt, 2 teaspoons red chili powder, and mix well.
Step 5
Add 1 chopped tomato and mix well. Cover the lid and cook for 10 minutes.
Step 6
Remove the lid and mix everything well. Once the baingan is smashed, add 1 teaspoon coriander powder, 1/2 teaspoon garam masala, and mix well.
Step 7
Make a small area in the center, place a small bowl, and burn coal for a smokey flavor.
Step 8
Add ghee on coal and close the lid until the smoke is gone.
Step 9
Take out the bowl and mix well. Garnish with coriander leaves and turn off the stove.
