Panchmel Dal or Pancharatan Dal is a Rajasthani style dal made by mixing 5 different types of lentils. It is usually served with Phulkas, Parathas, Rotis, and it tastes superb with Zeera Rice.
Ingredients
- 1 Tablespoon Chana Dal
- 1 Tablespoon Toor Dal
- 1 Tablespoon Urad Dal
- 1 Tablespoon Masoor Dal
- 1 Tablespoon Moong Dal
- 1/2 Teaspoon Turmeric Powder
- 1 Tablespoon Oil
- 1/2 Teaspoon Jeera
- 1/2 Teaspoon Mustard Seeds
- 4 Dry Red Chilies
- 1/2 Cup Onions
- 3 Chopped Green Chilies
- Few Curry Leaves
- 1 Cup Chopped Tomatoes
- 1 Teaspoon Chopped Ginger
- 1/4 Teaspoon Turmeric Powder
- 1/2 Teaspoon Red Chili Powder
- 1 Teaspoon Salt
- 1/2 Teaspoon Coriander Powder
- 1/2 Teaspoon Jeera Powder
- 1/4 Teaspoon Garam Masala
- 1/2 Teaspoon Kasuri Methi
- Chopped Coriander Leaves
Method
Step 1
In a bowl, add 1 tablespoon chana dal, 1 tablespoon toor dal, 1 tablespoon urad dal, 1 tablespoon masoor dal, 1 tablespoon moong dal, and soak them for 1 hour.
Step 2
Add the dal to the pressure cooker and add 1/2 teaspoon turmeric powder. Cook up to 2 whistles. Once the pressure releases, mash the dal and keep it aside.
Step 3
Heat 1 tablespoon oil and add 1/2 teaspoon jeera, 1/2 teaspoon mustard seeds, 4 dry red chilies, 1/2 cup chopped onions and mix well.
Step 4
Add 3 chopped green chilies, few curry leaves, and mix well.
Step 5
Add 1 cup chopped tomatoes, 1 teaspoon chopped ginger. Mix well and cook until the tomatoes are soft.
Step 6
Add 1/4 teaspoon turmeric powder, 1/2 teaspoon red chili powder, 1 teaspoon salt, 1.2 teaspoon coriander powder, 1/2 teaspoon jeera powder, 1/4 teaspoon garam masala, 1/2 teaspoon Kasuri methi, and mix well.
Step 7
Add cooked dal and mix well. Close the lid and cook for 3 minutes.
Step 8
Add chopped coriander leaves and turn off the stove.
