Carrot halwa is a Indian pudding made with fresh carrots, milk, sugar, ghee, khoya & nuts. It is made by grated carrots in full fat milk & then sweetened with sugar. It is flavored with cardamom powder & garnished with chopped nuts.
Ingredients
- 3 Cups Grated Carrot
- 1 Tablespoons Ghee
- 1 1/2 Cup Sugar
- 1 1/2 Cup Milk
- 1 Tablespoon Cashews
- 1 Tablespoon Raisins
- 1/3 Cup Khoya
- 1/2 Teaspoon Elachi Powder
Method
Step 1
Heat 1 tablespoon ghee, add 1 tablespoon cashews, 1 tablespoon raisins, and sauté for 2 minutes. Keep it aside.
Step 2
Add 3 cups of grated carrots in the same ghee and sauté for 5 minutes, or it changes the color slightly.
Step 3
Add 1 1/2 cup milk and cook for 5 minutes.
Step 4
Add 1 1/2 cup sugar and mix until all the sugar dissolves—Cook for 5 minutes.
Step 5
Add 1/3 cup khoya and mix until the khoya dissolves.
Step 6
Add 1/2 teaspoon elachi powder, add fried nuts. Mix well and turn off the stove.
Step 7
Serve warm.
