Egg Curry in tomato gravy is a flavorful Indian gravy that would be a perfect accompaniment for your main course. Boiled eggs in a dash of tangy tomato puree will generate an irresistible aroma. This egg curry is best served with steamed rice, chapati, or any variety of Indian bread.
Ingredients
- 10 Eggs
- 2 Tablespoons Oil
- 1 Cup Sliced Onions
- 5 Chopped Green chilies
- 1 Tablespoon Ginger Garlic Paste
- 1/2 Teaspoon Turmeric Powder
- 2 Bowls Chopped Tomatoes
- 1.5 Teaspoon Red Chili Powder
- 1.5 Teaspoon salt
- 1/2 Teaspoon Coriander Powder
- Chopped Coriander Leaves
Method
Step 1
Boil eggs and keep them aside.
Step 2
Heat 2 tablespoons of oil and add 1 cup sliced onions, 5 chopped green chilies. Sauté well until onions are golden brown.
Step 3
Add 1 tablespoon ginger garlic paste, 1/2 teaspoon turmeric powder, and mix well.
Step 4
Add 2 bowls of chopped tomatoes and mix well.
Step 5
Add 1.5 teaspoon red chili powder, 1/5 teaspoon salt, and mix well. Close the lid and cook for 5 minutes.
Step 6
Mix well and cook for 5 more minutes.
Step 7
Slit the eggs and them to the tomato curry. Mix slowly and cook on a medium flame for 6-7 minutes.
Step 8
Add 1/2 teaspoon coriander powder and mix well.
Step 9
Add chopped coriander leaves and mix well. Turn off the stove.
