This Triple Layer Dum Biryani features mutton, chicken, and shrimp. Dum biryani is the goodness of rice and meat that comes in layers. Layers of rice and meat are cooked in its own steam pressure until rice is fluffy and meat cooked just to perfection.

Ingredients (For Mutton Marination)

  • 250 Grams Mutton
  • 1 Teaspoon Raw Papaya Paste
  • 1/4 Teaspoon Turmeric Powder
  • 1 Teaspoon Chili Powder
  • 1 Teaspoon Salt
  • 3/4 Teaspoon Coriander Powder
  • 1/2 Teaspoon Biryani Powder
  • 1 Teaspoon Ginger Garlic Paste
  • 4 Tablespoons Curd
  • 1/4 Teaspoon Green Cardamom Powder
  • 3 Green Chilies
  • Few Mint Leaves
  • Few Coriander Leaves
  • 1 Tablespoon Fried Onions
  • 1 Tablespoon Oil
  • 1 1/2 Teaspoon Lemon Juice

Ingredients (For Chicken Marination)

  • 200 Grams Chicken
  • 1/4 Teaspoon Turmeric Powder
  • 1 Teaspoon Chili Powder
  • 1 Teaspoon Salt
  • 1 Teaspoon Coriander Powder
  • 3/4 Teaspoon Biryani Powder
  • 1 Teaspoon Ginger Garlic Paste
  • 4 Tablespoons Curd
  • 1/4 Teaspoon Green Cardamom Powder
  • 4 Green Chilies
  • Few Mint Leaves
  • Few Coriander Leaves
  • 1 Tablespoon Fried Onions
  • 1 Tablespoon Oil
  • 1 1/2 Teaspoon Lemon Juice

Ingredients (For Shrimp Marination)

  • 150 Grams of Shrimp
  • 1/4 Teaspoon Turmeric Powder
  • 3/4 Teaspoon Chili Powder
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Coriander Powder
  • 1/2 Teaspoon Biryani Powder
  • 1 Teaspoon Ginger Garlic Paste
  • 3 Tablespoons Curd
  • 1/4 Teaspoon Green Cardamom Powder
  • 3 Green Chilies
  • Few Mint Leaves
  • Few Coriander Leaves
  • 1 Tablespoon Fried Onions
  • 1 Tablespoon Oil
  • 1 Tablespoon Lemon Juice

Ingredients (For Rice)

  • 6 Cups Rice
  • 4 Teaspoons Salt
  • 1 Tablespoon Oil
  • 1 Teaspoon Ghee
  • 1 Teaspoon Ginger Garlic Paste
  • 6-7 Cloves
  • 8 Elachi
  • 2 Bay Leaves
  • 4-5 Cardamom
  • Javitri
  • Coriander Leaves
  • Mint Leaves
  • Fried Onions

Method (For Mutton Marination)

  1. Take 250 grams mutton and add 1 teaspoon raw papaya paste, massage the mutton for 3 minutes & keep it aside for 5 minutes.
  2. Add 1/4 teaspoon turmeric powder, 1 teaspoon chili powder, 1 teaspoon salt, 3/4 teaspoon coriander powder, 1/2 teaspoon biryani powder, 1 teaspoon ginger garlic paste, 4 tablespoons curd, 1/4 teaspoon green cardamom powder, 3 green chilies, few mint leaves, few coriander leaves, 1 tablespoon fried onions, 1 tablespoon oil, 1 1/2 teaspoon lemon juice and mix well, marinate it for 2 hours.

Method (For Chicken Marination)

  1. Take 200 grams mutton, add 1/4 teaspoon turmeric powder, 1 teaspoon chili powder, 1 teaspoon salt, 1 teaspoon coriander powder, 3/4 teaspoon biryani powder, 1 teaspoon ginger garlic paste, 3 tablespoons curd, 1/4 teaspoon green cardamom powder, 3 green chilies, few mint leaves, few coriander leaves, 1 tablespoon fried onions, 1 tablespoon oil, 1 1/2 teaspoon lemon juice and mix well, marinate it for 2 hours.

Method (For Shrimp Marination)

  1. Take 150 grams mutton, add 1/4 teaspoon turmeric powder, 3/4 teaspoon chili powder, 1/2 teaspoon salt, 1/2 teaspoon coriander powder, 1/2 teaspoon biryani powder, 1 teaspoon ginger garlic paste, 4 tablespoons curd, 1/4 teaspoon green cardamom powder, 3 green chilies, few mint leaves, few coriander leaves, 1 tablespoon fried onions, 1 tablespoon oil, 1 1/2 teaspoon lemon juice and mix well, marinate it for 2 hours.

Method (For Cooking Rice)

  1. Soak 6 cups of rice for 30 minutes.
  2. Boil water and add 3 teaspoons salt, 1 tablespoon oil, 1 teaspoon ghee, 1 teaspoon ginger garlic paste, 6-7 cloves, 8 elachi, 2 bay leaves, 4-5 cardamom, Javitri Phool in water and mix well.
  3. Add soaked rice in boiling water and mix well, cook until 80 percent is done.

Method (For Setting Biryani)

  1. In a pot, heat 1 tablespoon ghee and spread eventually.
  2. Add the marinated mutton to the bottom of the pot and add a layer of cooked rice.
  3. Add a layer of marinated chicken on top of the rice and add a layer of cooked rice.
  4. Now add a layer of marinated shrimp on top of the rice and then add the rest of the cooked rice on top of the shrimp.
  5. Mix a pinch of orange-red color in the milk and add it to the rice.
  6. Add 1 teaspoon ghee, 1/2 lemon juice.
  7. Add mint leaves, coriander leaves, fried onions & cover with foil.
  8. Close the lid & cook for 10 minutes on a high flame.
  9. Put a pan underneath the pot & cook on a medium flame for 40 minutes.
  10. Turn off the stove and serve hot with raita or salan.
