Amla or Indian gooseberry rice is healthy, delicious as well as easy to prepare rice. It’s similar to Lemon Rice or Raw Mango Rice. The sourness of gooseberry is balanced with spicy tempering, making this rice more appetizing and tasty.
Ingredients
- 8 Amla (Gooseberry)
- 2 Tablespoons Oil
- 1/2 Teaspoon Jeera
- 1/2 Teaspoon Mustard Seeds
- 1 Teaspoon Chana Dal
- 1 Teaspoon Urad Dal
- 2 Tablespoons Peanuts
- 2 Tablespoon Cashews
- 5 Dry Red Chilies
- 6-7 Green Chilies
- 1/4 Teaspoon Sugar
- Few Curry Leaves
- 1/2 Teaspoon Hing
- 2 Teaspoon Sesame Seeds
- 1 1/2 Teaspoon Salt
- 1 Cup Cooked White Rice
Method
Step 1
Grate the amla and keep it aside.
Step 2
Heat 2 tablespoon oil and add 1/2 teaspoon jeera, 1/2 teaspoon mustard seeds, 1 tablespoon chana dal, 1 tablespoon urad dal, 2 tablespoons peanuts, 2 tablespoons cashew, and mix well.
Step 3
Add 5 dry red chilies, 6-7 green chilies, and mix well.
Step 4
Add 1 teaspoon turmeric powder, grated amla, and mix well.
Step 5
Add 1/4 teaspoon sugar, few curry leaves, and mix well.
Step 6
In a separate pan, heat 1 tablespoon oil and add 1/2 teaspoon hing. Add the hing to the amla mixture and mix well.
Step 7
Add 2 teaspoon sesame powder, 1 1/2 teaspoon salt, and mix well.
Step 8
Add 1 cup cooked plain rice and mix well.
