Dum Aloo is a North Indian curry made with baby potatoes that are simmered in onion and tomato-based gravy, spiced with red chili powder, garam masala, and a garnished with dried fenugreek leaves.
Ingredients (For Potatoes)
- 200 Grams Baby Potatoes
- 1/4 Teaspoon Turmeric Powder
- 1/4 Teaspoon Chili Powder
- 1/4 Teaspoon Salt
Ingredients (For Gravy)
- 1 Onion
- 3 Garlic Cloves
- 3 Small Ginger Pieces
- 3 Green Chilies
- 1 Tablespoon Oil
- 1/2 Teaspoon Shah Jeera
- 3 Sticks Cinnamon
- 1 Tomato
- 15 Cashews
- 1/4 Teaspoon Turmeric Powder
- 1/2 Teaspoon Red Chili Powder
- 3/4 Teaspoon Salt
- 1/2 Teaspoon Coriander Powder
- 1/4 Teaspoon Jeera Powder
- 1/4 Teaspoon Garam Masala
- 2 Tablespoons Curd
- 1/4 Teaspoon Kasuri Methi
- Coriander Leaves
Method
Step 1
Boil the baby potatoes and peel the skin off.
Step 2
Add 1/4 teaspoon turmeric powder, 1/4 teaspoon chili powder, 1/4 teaspoon salt, and mix well.
Step 3
Heat 2 tablespoons of oil and fry the boiled potatoes until golden brown. Keep it aside.
Step 4
In a grinder add 1 onion, 3 garlic cloves, 3 small pieces of ginger, 3 green chilies, and make a smooth paste.
Step 5
Heat 1 tablespoon oil and add 1/2 teaspoon shah jeera, 3 sticks cinnamon.
Step 6
Now add onion paste and sauté for 3 minutes.
Step 7
Make a puree of 1 tomato and 15 cashews. Keep it aside.
Step 8
Add the tomato puree and mix well.
Step 9
Add 1/4 teaspoon turmeric powder, 1/2 teaspoon chili powder, 3/4 teaspoon salt, 1/2 teaspoon coriander powder, 1/4 teaspoon Jeera powder, 1/4 teaspoon garam masala, and mix well.
Step 10
Add 1/2 cup water and cook for 5 minutes.
Step 11
Add 2 tablespoons curd, 1/4 teaspoon Kasuri methi. Mix well and cook for 2 minutes.
Step 12
Add fried potatoes and mix well.
Step 13
Add coriander leaves and turn off the stove.
