Hyderabadi Veg Biryani is a delicious medley of succulent vegetables, spices, ghee, saffron and flavorful basmati rice which no one can resist. The best part is you can make a great restaurant style vegetable biryani at home easily.

Ingredients

  • 5 Cups Basmati Rice
  • 2 Potatoes
  • 1 Carrot
  • 2 Baby Corn
  • 4 Chilies
  • 1/2 Bowl Beans
  • 1 Cup Cauliflower
  • 1/2 Cup Paneer
  • 1 1/2 Lemon
  • 1 Cup Fried Onion
  • 1/2 Cup Mint Leaves
  • 1/2 Cup Coriander Leaves
  • 1 Teaspoon Shah Jeera
  • 4 Cinnamon
  • 4 Bay Leaves
  • 5 - 6 Elachi
  • 1 Teaspoon Mace
  • 1 Teaspoon Biryani Masala
  • 1 Cup Curd

Method

Step 1

Add vegetables in hot water and add 1 teaspoon salt. Boil for 2 minutes.

Step 2

Drain out the water and add vegetables to a bowl.

Step 3

Add chilies, 2 teaspoon chili powder, add salt as per taste, add 1/2 teaspoon turmeric powder, add 2 tablespoon ginger garlic paste.

Step 4

Add shah Jeera, cinnamon & bay leaves, add half cup coriander leaves, add half cup mint leaves, add fried paneer, add biryani masala, add half cup fried onions, add 1 cup curd & mix well.

Step 5

Add 1 tablespoon lemon juice, add 2 tablespoon oil.

Step 6

Take 8 cups of water, Add leftover species, 1 teaspoon ghee, add salt as per taste.

Step 7

Add 5 cups of soaked basmati rice and cook till 80 percent is done, stirring occasionally.

Step 8

In a cooking bowl, add ghee & add marinated vegetables, add cooked rice.

Step 9

Add 3 teaspoon ghee, make a space in the rice, add saffron milk, add fried onions, add coriander, and mint leaves.

Step 10

Seal it with silver foil, close the lid with a plate, put weight on it and cook for 20 minutes on low flame.

Step 11

Remove the weight, plate, silver foil & enjoy the hot delicious veg dum biryani.
